Osso Bucco is generally a smaller cut of the shanks, but when you’re talking Wapiti X Elk, there’s nothing small about it! This large animal delivers a big leg, which means our Elk Shank Osso Bucco is large with a nice chunk of meat on it. Perfect to cook in the traditional ossobucco recipe – slowly braised to perfection until the flavorful meat falls off the bone. At Steaks and Game we source our Wapiti X Elk from family-owned farms in New Zealand. The animals are always naturally raised and never given hormones, antibiotics or steroids, and they’re allowed to roam freely to feed on fertile pastures.
