Wagyu Steaks by Marble Score
It’s time to forget everything you know about meat: Wagyu beef is in a league all of its own. Literally! Wagyu beef has so much more delicious marbling than even the top USDA Grades, it’s scored by its own grading system. The Wagyu Beef grading system is called the Marble Grade Score (MGS), which ranks the meat according to its fat marbling – that spidery web of succulent white fat that forms a pattern similar to marble on the meat. Marbling gives Wagyu that amazing tenderness, flavor, and perfect juiciness. Wagyu cattle has, thanks to its particular genetics, an incredibly high amount of marbling, so even the lowest grade of Wagyu will have a higher marbling than USDA Prime meat. The scores range from 1 to 12, 12 being the Wagyu beef with the most marbling.
