Pork Osso Bucco
The traditional Osso Bucco dish was born for wild boar. The lean hog meat slowly but surely surrenders to the slow and long cooking method, while the intense pork flavor grows mellower and more complex as it cooks. A cut from the hog’s shanks, our wild boar Osso Bucco cut comes with the bone (so you can watch the meat can fall off of it after you cook it). Our wild boar osso bucco meat comes from wild pigs trapped and killed humanely in Texas’ hill country.
