Cut from the heart of the loin, center-cut fillets are the crème of the crème of the Strip Loin. The advantage of the center-cut is this: the center of the striploin has the more evenly sized and consistent meat. This means our center-cut Wagyu NY Strips are more even in size and shape, which makes cooking them all at one a breeze.
What we love about a NY Strip steak: the perfect balance of flavor and texture, beefiness, and tenderness. Yes, the tenderloin is the most tender, and no one can argue with the flavor boost of the Ribeye, but we find the Strip delivers the best of both worlds, the perfect equilibrium. With Wagyu, you always get an enhanced version of beef – beautifully marbled, supremely buttery, and deliciously juicy. These steaks are sourced from MS3 Wagyu. Rich, but approachable and more wallet friendly. It’s the lower end of the scale, but miles above regular store-bought beef. Extremely high marble score Wagyu tends towards intense richness – think four bites per person rich. MS3 steaks are perfect for grilling since they’re less prone to flareups.
Sourced from Broadleaf, our Wagyu strip loin comes from 100% heritage Wagyu cattle. Raised on the open pastures of the vast Australian countryside, small sustainable farms carefully raise these cattle using the same time-tested methods as those made famous in Japan. Raised free-range in the Australian Outback, our premium Wagyu cattle are never given antibiotics or hormones. They're finished on 300 days of a special formulation of grains for extra tenderness and richness.
