Even though a classic osso bucco dish is made with veal shanks, the name also refers to any animal’s bone-in shanks as well, and our intensely-flavored venison osso bucco is a thing of animal beauty.
Loaded with flavorful 100% New Zealand Red Deer meat, these are perfect to simmer and slow-braise with aromatic herbs and your favorite seasonings until that incredibly tasty marrow is ready to be scooped out. Serve with a creamy polenta in the winter, or with fresh roasted vegetables when the weather is milder.
Unlike regular hunted deer, our farmed New Zealand venison osso bucco never has that “wild” taste so characteristic of game, but rather, it’s mild and rich, flavorful but not gamey. The deep rose red meat is lean (one-fifth the fat of beef, plus it has more iron and Vitamin D – delicious and nutritious!) but not tough. Sourced from family-owned farms that never use hormones, antibiotics, genetically modified or animal by-products in their feed, this meat comes from grass-fed, free-range 100% New Zealand Red Deer.
