Fall is definitely here. As our grill flames extinguish and the fireplace roars to life, we head into the warm, cozy kitchen for autumn meals. And what we crave is warm, cozy food.
There’s no better comfort food than chili. Everyone has their own special recipe, toppings, and reasons to dish it out. Whether it’s game day, family dinner, or something to heat you up post trick-or-treating, chili is the ultimate dish for a crowd - one big pot, lots of small little bowls.
Now that it's venison season, we're all about Cervena Venison Chili. All-natural, bursting with flavor, you get a dish that's bursting with flavor without any overpowering gaminess and brimming with fall-apart tender meat.
This lean and healthy meat pairs nicely with a mix of spices, black beans, and a touch of sausage. One of the best things about Venison is its natural leanness, but it also means it cooks quickly and tends to dry out. Adding a fat of some sort is key when cooking with venison, which is why we added pork to our version. This adds juiciness, flavor and keeps things moist. You can also add bacon or even lard. Serve this alone in a heaping bowl, topped with sour cream, or use it to top hot dogs. We used ground venison but you can also make this thicker and use venison stew meat - chunkier cubes. Venison Chilli Ingredients
- 0.5 lb, black beans
- 1 large chopped onion
- 3 chopped garlic cloves
- 4 tablespoon of extra virgin olive oil
- 1 lb, ground venison meat
- 0.3 lb, Italian sausage or Fresh Chorizo
- Salt and black pepper1 teaspoon, coriander (can be ground)
- 1 teaspoon, cumin
- 2 chopped dried chilies
- 1 tablespoon paprika
- 2 tablespoons tomato paste
- Vegetable stock, as needed
- Cilantro leaves for garnish
