This Heritage Berkshire pork tenderloin comes the folk at American Berkshire, who source their Berkshire pigs from local farmers in Iowa and Minnesota. Their animals are raised humanely, never given any antibiotics or hormones or animal by-products in their feed. Berkshire pigs are what are called a heritage breed, animals descended from pigs herds of the British House of Windsor. Often called the “Kobe beef of pork”, black-coated Berkshires have privileged genetics, which result in naturally highly marbled meat that makes it uber-juicy and delicious. These genetics are carefully preserved and passed along each generation through DNA and pedigree controls.
