Essentially a spare rib rack without the rib tips, the popular St. Louis -cut ribs get an extra dose of wild flavor when it comes from our all-natural Texas wild boar.
Our Wild Boar St. Louis ribs are meaty and uniform, perfect to get that perfectly even cooking all around – so each rib is just as tender as the next. Unlike regular pork, these are bold red and never bland, with a naturally sweet and nutty flavor (compliments of the animal’ grazing diet) that just jumps at the palate.
Add your favorite rub or marinade, bbq sauce to our wild hog ribs, and feel free to experiment – wild boar meat is sweet and nutty and very bold, so it stands up to bolder flavors than regular pork. Smoke these wild hog ribs until the meat falls off the bone, braise them, make succulent Chinese ribs, oven cook or grill them, whatever your method, the bone is all that’s gonna be left over once you’re done.
One of the only really true wild meats available for purchase in the United States, our wild boar is sourced from small ranches just outside San Antonio, Texas, where the pigs are feral and allowed to roam free. The animals graze on a diet of wild nuts, fruits, and roots, which gives the meat the deliciously sweet and nutty flavor we love, until they're humanely trapped and transported for slaughter – never hunted. Never given antibiotics, hormones or steroids.
