It arrives as a whole muscle, which gives you the option of portioning the steaks yourself to your desired and preferred size, or to cook it as a roast. A light seasoning with fresh ground pepper and sea salt is all you need to enhance this beauty – we don’t recommend marinades or rub at this level of marbling; it just competes with the delicious flavor it has. We also always recommend cooking Wagyu to medium-rare, as overcooking tends to do away with the natural tenderness.
