This succulent whole Wagyu Rib Eye from Australia’s Greg Norman Signature brand is cut from a wet-aged Signature Wagyu prime rib roast. It’s available whole (the full, uncut 11 lb. muscle) or expertly hand-cut by our butchers into Rib Eye Steaks in a variety of thicknesses.
Coming in at Marble Score 7, this Wagyu Rib Eye is sumptuously rich. Part of Greg Norman’s premium Kobe-style line from Australia, this is one of the most premium Wagyu products on the market. Greg Norman Signature Wagyu beef is made from the same cattle breeds used to produce the famed Japanese Kobe beef. They're raised 18 months free range, then finished with a special Japanese formulation of grain for 360 days to ensure that fantastic tenderness.
The deep rose meat is generously interwoven with that creamy intramuscular fat Wagyu cattle is prized for. With Wagyu beef, the higher the grade, the more marbling the meat has, and the softer, richer it becomes (the scale goes from 1 to 12, but Steaks and Game only sells grades 3 and higher). Marble Score 7 is top of the line marbling, and this beef is buttery-soft, the texture enveloping, the flavor mouthwateringly rich.
Grilling advice: We suggest that you cook on a grill pan rather than an open flame, as that extra fat marbling on Wagyu beef will melt over the grill and may cause flare-ups. Grill to medium-rare with just a bit of salt to develop a gorgeous brown crust.
Cutting details: Please note that not all steaks will be exactly the same size, and some steaks will be cut a bit thicker or a bit thinner, but we’ll try to keep it as close to what you requested as is possible. If there are any trimmings left over after the cutting process, of course those will be included as well.
