Elk Stew Meat, Diced
Elk is among those rare, cherished foods that are healthy yet delicious at the same time. Low in fat and high in protein, this crimson-rose meat has a slightly different taste than beef. Think venison, but milder and a little sweeter. We cut our Elk Stew Meat primarily from the shoulder/neck area (as well as other trimmings), so it's packed with juicy, rich flavor. Diced into cubes around an inch thick, it can be tougher than other elk cuts, so requires long, slow cooking techniques to really soften it up and bring out those flavors. Stewing is especially effective since the profusion of water (along with whatever spices or seasonings are used) really tenderizes and flavors every part of the meat. But any slow-cooked recipe will put this New Zealand elk meat to good use: chili, curry, even a fancy Burgundy (Bourguignon)...is anyone elks getting hungry, or is it just us?
Our Elk Stew Meat is supplied by Broadleaf, one of the premier distributors of gourmet meats in the USA. They source their elk from free range New Zealand elk raised on a grass-fed diet completely devoid of hormones, steroids or GMOs. Broadleaf also prepares and distributes other specialty meats, including New Zealand venison, Australian Wagyu beef and Texas wild boar, all derived from sustainable, humane sources.
Storage: Product arrives frozen and vacuum sealed. Keep frozen until ready to consume, then thaw overnight in the refrigerator. Product will last 6 months frozen, or 5 days thawed.
