As part of their process, Maui Nui must follow strict protocols that require a USDA inspector to follow each hunter into the field to certify the deer is brought back for processing immediately. This ensures that the venison has very clean flavor and is low on the gamey taste normally attributed to wild game.

Venison shoulder can be cooked in a number of different ways. The classic recipe is to slow cook or oven roast the meat over a long period of time. This method allows all of the juices in the meat to be drawn out in order to keep your venison both tender and moist. In addition to the great taste, it is important to note that Maui Nui was born out of a necessity to control the Axis deer population - basically eating Axis deer helps the environment. These deer were introduced to Maui almost fifty years ago, and with not natural predators their population grew from nine to nearly fifty thousand. They threaten Hawaiian ecosystems and disrupt the livelihoods of many farmers and ranchers on Maui island.
