Although it’s got the name 'corn' in its title, corned beef brisket has nothing to do with what we think of today as corn. Instead, its name comes from the old word for salt who’s large hard grains were referred to as 'corns'. So to make things a little simpler, corned beef is just salted beef. This method for preserving meat was developed centuries ago when salting or pickling foods was the only way to keep them from going bad before the days of refrigeration. The brine used on corned beef is very similar to that used to make pickles, and it would be fair to say that corned beef is essentially pickled beef! Once a necessary addition, we’ve continued the practice of adding salt and a heady blend of spices to our meats for the wonderful flavor it adds.
Situated near the chest of the cow the brisket supports a lot of weight and is used continuously in day to day activity. This heavy use makes it a notoriously tough and chewy cut filled with a lot of connective tissue, but at the same time lends it that intensely beefy taste we all love so much!
