Pheasant is a game bird that’s forever tied with old-fashioned luxury and high-end cooking, but that should not be overlooked in the modern kitchen. It's easy to cook, delicious to eat – meaty, flavorful and moist – and also very healthy, with less total fat, saturated fat and cholesterol than chicken or turkey. Whether baked, broiled or braised, airline pheasant breasts should be cooked slowly, to prevent drying out, and they will definitely benefit from a coating with butter or olive oil for extra succulence. Coat these airline pheasant breasts with your favorite herbs, serve them with a classic orange sauce or Madeira wine sauce, or perhaps wrap them in some delicious bacon or Prosciutto for some tasty added fat.
