The original Jidori chickens came form Japan, a cross breed between Hinaidori and Rhode Island Red. Jidori in the US comes only from one source – Dennis Mao in California. Disappointed with flavorless, water-plumped American chickens, this Chinese-American entrepreneur decided to bring real fresh Jidori to the American tables. Translating as, “chicken from the ground”, Jidori is raised free range in small California farms, fed a vegetarian diet of grains (no meat by-products), never given antibiotics, hormones or steroids. The whole organic Jidori chickens are processed in a tiny, boutique-like facility in Los Angeles, cleaned by hand and chilled in large tubs of ice and water, which prevents the water retention of commercial birds. Sent to its destination on the same day of slaughter, whole organic Jidori chicken is a creamy, clean-tasting, full-flavored bird with a healthy pink breast, a firm (never chewy) texture, a super juiciness and a richer chicken flavor. Beloved by chefs, it's served in the best restaurants in the the US.

Q: When served is it typically served pink at the bone? And if so, does this mean that it’s not fully cooked?
A: According to USDA, as long as all parts of the chicken have reached a minimum internal temperature of 165°, it is safe to eat. Fully cooked poultry can sometimes show a pinkish tinge in the meat, especially around the bone surrounding tissue. This can happen especially when the chickens are young as a result of the bones being soft. Thus pink tissue surrounding the bone is not a sign of the meat not being fully cooked.
